Three of My Favorite Things

As I work through my peak mileage training weeks for my upcoming marathon, I have confirmed something.  I love to eat.  Food is awesome.  Food is a necessity.  Food IS fuel.  I think about food before, during, and after all of my runs.  Since all I’ve been doing lately is running for miles, I basically think about food all of the time.  While I could list probably 30 things that I love to eat lately, I’ll keep it short and sweet today.  Here are three of my favorite things these days.

1.  No Bake Energy Bites-  Thanks to my friend Darci, I have developed a small obsession with these things.  First of all, they are no bake.  WHAT!!!  Does it get any easier?  Second, they are AMAZING!!!  I honestly can not eat just one.  It’s basically impossible.  Third, they are pretty healthy.  SCORE!  Since I’ve been meeting a group for my long runs lately, I bring a few with me to eat on my ride home.  For the last few miles of these runs when I’m feeling ravenous, all I can think about is enjoying these treats when I finish.

2.  Chocolate Milk –  When I finished the Rock N’ Roll Savannah Marathon this past Fall, I drank not one, not two, not three…but FOUR chocolate milks right after crossing the finish line.  I just couldn’t get enough!  I am a self proclaimed milk addict and chocolate obviously makes everything better, so the combination of the two is like heaven on earth to me.  I LOVE drinking chocolate milk after my runs, long and short.  I honestly don’t know all the science behind why chocolate milk is a great recovery option, but I’m so glad that it is!

3.  Oatmeal Bowls –  My Mom told me about this oatmeal bowl she had put together several months ago and when I first heard about it, it sounded disgusting to me.  Most people that I know, including my husband, think it sounds gross when I describe it to them.  I’m telling you first hand, it’s not.  It is by far one of the best meals I have had, especially before or after a run.  You’ve gotta try it!  If I recall correctly, my Mom found this recipe in a Mens Health magazine.  I’m still not sure why she was reading it, but I’m glad she was!  Here is my simple version of the recipe.

Combine 1/2 cup water, 1/2 cup milk, 1/2 cup oats, and boil/cook.

Soft boil one egg.  (Boil water then add egg and let boil for 5 minutes)

Cook two sausages.  (I just use breakfast link sausage because it’s quick and easy…you can use any type you choose!)

Put oatmeal in a bowl and mix in sausage.  Top with soft boiled egg, juice from 1/2 lemon, and olive oil.

Mix together and enjoy!
